Elin Stenberg

Elin Stenberg
My name is Elin Stenberg and I am currently employed as a postdoctoral researcher at the Swedish University of Agricultural Sciences (SLU), department of Applied Animal Science and Welfare. My background is as an agronomist in animal science from SLU.

Presentation

My work has primarily been centred on improving the technological and sensory attributes of meat, such as tenderness, colour, and flavour, with an emphasis on meat from ruminants. The conducted studies has compared different production systems and their effects on meat quality. This includes the evaluation of fresh versus frozen lamb meat, slaughter techniques, and feeding systems, aiming to identify optimal practices that enhance both sustainability and product quality.  In my research I try to identify factors within the production system of meat where the results can have practical implications thru the whole chain; from farm to processing at the abattoir to storage practices of the sellable products. Recently I am working with  development of food systems for beef blood and sheep meat and origin verification of Swedish pork meat.
